In the case of fortified wines, the yeast are killed by the addition of high-strength distilled alcohol before they have eaten all of the sugar
How can you identify tannin on the palate?
Tannins can taste bitter and cause your mouth to feel dry

Cedar, cloves, coconut, smoke and vanilla

Chardonnay is the grape used for the white wines of Burgundy in France
