What does sorting (triage) depends on?
A
-ripeness and health of grapes
-if been sorted in vy
-intended final price and quality of wine
-physical state of grapes (if arrive in large containers- grapes at bottom= crushed and release juice)

Why does the more sorting carried out mean a higher cost?
A
-labour
-time
-more scrutiny= smaller yield
Judgement needs to be made if justifiable in relation to return

What are the sorting options for quality wines?
A
-removing unwanted grapes/bunches before picking
-hand on a table or moving/vibrating belt (vibrating belt also removes MOG)
-optical sorting- high tech- scans 100 grape sample, rejects any grapes that don’t conform to sample
