- they are both found in wheat

What happens during MIXING?
A
- Gliadin & gluten are mixed with water to produce sticky & tangled molecules that are now GLUTEN

How does SUGAR & FAT affect the production of GLUTEN?
A
- It prevents the absorption of water by flour

What happens during KNEADING?
A
- Gluten molecules are PHYSICALLY REARRANGED
into a STRAIGHT & UNTANGLED structure - it becomes stretchy & ELASTIC and stretches to trap co2 in it’s network
