Dip made from mashed chickpeas or beans, blended with tahini, olive oil, lemon juice, salt and garlic.

Vegetarian dish made of tomatoes, parsley, mint, bulgar, and onion.
We use Quinoa to keep it GF.
Pita
Soft, slightly leavened flatbread
Tapenade
Provençal dish consisting of puréed or chopped olives, capers, anchovies and olive oil.
Jicama
Mexican yam bean
Trufle
Fruiting body of a subterranean Ascomycete fungus.
Falafel
Deep fried ball or patty made from ground chickpeas or fava beans.
Mornay Sauce
Béchamel sauce with shredded Gruyère cheese and egg yolk added.
Salsa
Spanish term for sauce. Tomato based dip
Vinaigrette
Emulsion of vinegar and form of oil sometimes flavored with herbs spices and etc. Salad dressing or cold sauce or marinade.
Pico de Gallo
chopped tomato, onion, cilantro, serranos, salt and lime juice
Steam Bun
Filled bun or bread like dumpling
Aioli
Provençal sauce of garlic, olive oil, lemon juice and egg yolk. Room temp.
Braised
Combination cooking method that uses both moist and dry heats. Seared at high temp then covered pot in liquid.
Frito
Cooked in oil
Fattoush
Levantine bread salad made from pieces of Arabic flat bread and mixed greens
Ahi Tuna
Yellowfin tuna found in tropical or subtropical waters
Poke
Traditional Hawaiian dish made from raw yellowfin cut seasoned and mixed with other ingredients.
