- Vintage wines must be aged at least 2yrs in barrels, and aging MUST occur of the islands of Thera or Thirasia
- If released with an aging statement instead of a vintage, the wine must be aged in an oxidative manner for at least 4yrs (Aging statements must be listed as a multiple of 4 - 4, 8, 12, 16…)
