Brandy from Burgundy.
- Created from the lees-saturated wine left over after racking
Both copper pot and copper column stills may be used.
Minimum distillate strength: 72%, final product min 40% abv
Authorized Additives: coloring and sweetening
Aging Requirements: minimum 3 years in oak barrels of less than 60 hl
Age Indications:
Vielle: minimum 4 years of aging Très Vieille: minimum 6 years of aging Hors d'Âge: minimum 10 years of aging
Label may not make any mention of grape variety or specific geographic location.

Based on red and black Cherries in Haute-Saône, Vosges.
Aging Requirements: Prior to release, Kirsch de Fougerolles must be aged for a min. 6 months in a neutral container
Bottling: Traditionally, the Kirsch de Fougerolles is released in a mouth-blown artisan bottle called the Bô, with an approx. capacity of 70 cl
