Food Training Flashcards
What does “entice with” mean?
A short and flirty way to describe each dish. Used to spark the guests’ interest and entice them to find out more.
What does “chef says” mean?
A unique description of each dish to use when suggesting that dish to a guest. Designed to make a guest feel confident in their selection.
What does “Made With” mean?
A list of ingredients that partners should be able to list off to the guests without hesitation.
What does “Notable Spotlights” mean?
Ingredients that may change a guests mind based on their personal preference.
Guests commonly mention these ingredients as things they prefer to avoid such as spicy elements, garlic, onion, etc. This section is NOT to be relied on for complete Allergy information.

What does “enhanced with” mean?
This section provides opportunities to enhance a dish such as add ons and upgrades. This will not only enhance the guest experience but also
your average guest checks. Everybody wins!
What does “Paired With” mean?
Wine & food belong together! Make a guest’s experience memorable with a great wine pairing. These suggestions from our Sommelier- an ideal variety or section of the menu - are the perfect place to start. Consult your menu for specific options.
What does “Delivered With” mean?
Anticipate your guest’s needs by ensuring they have all of the necessary settings to enjoy their meal. Settings should be delivered before the dish hits the table. A guest should never have to flag someone down for what they need.
What is a “Delivery Description”?
There are specific items on our menu that are best enjoyed with a little explanation. When the food is delivered, we want you to share the
components of these dishes to your guest.
What are the “Menu Symbols G or V”
V signifies Vegetarian and G is used for dishes that do not contain gluten but may come in contact with traces of gluten.

Standards and Expectations of “Share Plates”?
Standards
● Used when guests are sharing appetizers or entrees.
● One share plate per person.
● Do not provide additional napkins with the share plates.
Expectations.
● To be delivered by the service team prior to food arriving.
● Place one plate in front of each guests. Do not stack plates in the middle of the table.
● Do not bring napkins with the plates. Each guest was already given a napkin with their cutlery.
● Only provide additional napkins if requested by the guest.

DELIVERY DESCRIPTION: Let me take you on a tour of what we have: At the top we have our poached lobster
tail, poached prawns tossed with a lemon vinaigrette and fresh oysters (list variety),
Moving to the bottom we have more delicious (list variety) oysters, our delicate yuzu
tuna tataki and lastly our crispy prawn/ dynamite roll. Going onto the accouterments:
We have our black pepper Yuzu Mignonette, fresh horseradish, spicy house made
cocktail sauce, and pickled ginger and wasabi. Enjoy!
