food tech - short answer Flashcards
Safe storage of food - shelf life
Shelf life is the amount of time a food can be safe to eat. How you store your food depends on it’s shelf life.
Perishable food
It usually lasts less than 7 days, even when it is stored correctly. Eg. fresh meat.
Semi-perishable food
It lasts from a week to several months. Eg. eggs and nuts.
Non-perishable food
They do not spoil quickly and can last months. Eg. flour and sugar.
3 methods for storing food
Dry storage (pantry or cupboard), cold storage (refrigerator) and freezing (freezer).
Technologies impact on availability of food
There is an improvement of storage, packaging foods, breeding and farming techniques.
Fat soluble vitamins
Fat soluble vitamins are vital for brain and immune health. (vitamins A, D, E, K) .
Microwaving
A healthy way to cook as it only takes a short amount of time resulting in minimal nutrient destruction.
Boiling
The large volume of water dissolves and washes away water soluble vitamins and most minerals.
Steaming
Steaming veggies allows them to sit in their own juices and retain their nutrients.
Grilling
It gives you maximum nutrition.
Danger zone
Temp between 5 and 60 degrees as its the ideal temp for bacteria to multiply.
Allergies
The most common are nuts, milk, egg, soy and wheat.
Calcium
Your body needs calcium to maintain strong bones and teeth.
Bacteria
Bacteria can be useful to make certain food products (cheese and yoghurt), and the human body uses the good bacteria in the gut to help break down food during digestion. Some forms of bacteria can cause food poisoning or even death
Dietary requirements
Vegetarian, vegan, gluten free, lactose intolerant and peanut allergy.
Nutrient requirements
Protein (lean meat, egg, fish, dairy), carbohydrates (whole grains, fruits, veggies), fats (cream, butter, oils), vitamins (fat-soluble, A, D, E, K and water-soluble, B, C) and minerals (calcium, magnesium).
Psychological influences on selection of food
Beliefs (religion and culture), habits (can be unhealthy and difficult to break) and values (maintenance of health).
Nutrient requirements - function
protein (build and repair tissue), carbohydrates (provide energy), fats (provide backup energy), vitamins and minerals (maintain optimal health).
