What does vitamin A do?

What is denaturation?
When protein molecules unravel from their naturally coiled state.

What is gelatinisation?
When starches are heated with liquid, they swell and will thicken
What is dextrinisation?
When food changes colour to a brown.
What is caramelisation?
Caramelisation happens when sugar is introduced to heat
What is aeration?
the process of adding very tiny pockets of air to something
What is plasticity?
the ability to be spread and shaped
What is shortening?
a fat, solid at room temperature, which can be used to give foods a crumbly and crisp texture such as pastry
