Types of food service system
Counter service, fast food, cafateria, Seated counter service, Carvery service, Buffet
Fast food
Foods and drinks displayed on a menu behind the counter or on an outside screen/ poster at drive through outlet. The customer places their order and pays at a sales point at the counter , or from a communication point at a drive-through fast food outlet.
Cafeteria
All the types of food and drink on sale are displayed at a long counter . Customers move along the counter with a tray and choose what they want , then queue up to pay at the end . Used in schools, some restaraunts and cafés.
Seated Counter service
Customers sit at the counter on stools and are served their food. Used in places such as sushi bars, stations and airports.
Carvery service
Roasted meat joints are displayed on a counter and carved for customers by a chef. Customers help themselves to vegetables , sauces etc.
Free flow
Different types of food and drinks are displayed at different counters . Customers take their trays and choose what they want from different counters then pay at a central till
Multi point
Different types of food and drinks are displayed and paid for at seperate counters
Table service
Waiters and waitresses take food orders and serve customers seated at a table (used at most restaraunts , pubs etc.)
Gueridon system
This is used in restaraunts for cooking or preparing for service , some food e.g. steak , caesar salad , flambeed bananas , from a special trolley at a customers table
Transport catering service
For long distance trains, usually have dining carriages for sit down meals or takeaway cafeteria food available. Mobile food and drinks trolleys are also used to deliver directly to travellere throughout the train. On long haul commerical flights, passengers are given one or two meals (frozen or cook chilled food). Meals are heated in the aeroplane kitchens and distributed to passengers
Ships
Cruis ships have a variety of food service options available including table and counter service. Ferries will usually have cafeteria service.
Vending systems
Vending machines provide hot and cold drinks , snacks and meals. They need to have a person or team of people in charge of regularly maintaining and restocking them
The commerical sector (of catering)
Where a business aims to make a profit from the hospitality and caterint services it provides
Non commercial sector (of catering)
The non commercial catering services sector where an organisation (e.g. staff canteen in a shop or hospital) provides catering services but doesnt necessarily aim to make a profit.
Examples of establishments where hospitality and catering is carried out for business, leisure and tourism (commercial)
Hotels, guest houses, bed and breakfast, inns and pubs, farmhouses, family holiday camps and parks, glamping, cruise ships, long distance trains, airlines, motorway services, youth hostels
