What is a HACCP?
A food safety management system that helps businesses to identify, assess, control and reduce food safety hazards to an acceptable level, or otherwise eliminate them.
What is a food safety risk?
The likelihood that a hazard will cause harm, depending on the possibility that it occurs and its potential severity.
What is food poisoning?
An illness caused by eating food where the contaminant has multiplied in or on the food.
What is a food-borne illness?
- The umbrella term that references an illness caused by eating contaminated food.
- It covers both food poisoning and food-borne disease.
What is a food safety hazard?
A microbial, allergenic, physical or chemical contaminant that is found in food. They are dangerous.
What is a control measure?
An item, action or procedure that is put in place to prevent or reduce the risk of the hazard causing harm.
What is a food-borne illness?
An illness caused by bacteria or viruses that multiply inside of the consumer, not in or on food.
What is contamination?
A contaminant or hazard being present in food.
What is food safety?
The science of handling, preparing and storing food in ways that prevent food-borne illness.
