What is the process of making yoghurt?

A

1) Milk is homogenised so the fat droplets are broken down so they can’t be separated
2) Milk is pasteurised to destroy any harmful bacteria
3) Milk is fermented by adding a starter culture to the bacteria - this means it’s incubated
4) Bacteria acts with milk, sugar and lactose to produce lactic acid. This coagulates milk protein
5) The thickening process produces the creamy yoghurt consistency
