Food Processing And Prodcution Flashcards
What is food processing
The stages in which raw ingredients are turned into food and made suitable for consumption
Why is food processed
-make it safe to eat
-slow down spoilage
-add variety to the diet
-offer convenience to customers
What is the “input” in a food production system
The different ingredients, materials, machinery and items that go into a system
What is the “process” of a food production system
Different things that happen to the input to change it into the output
What is the “output” of a food production system
The finished food product
What is primary processing
When food has to be processed before it can be eaten - for example, wheat processed into flour
What is secondary processing
When a food has already undergone primary processing and is then transformed into a food product - for example flour processed into pasta
4 stages of wheat being grown and harvested
- wheat grown in a field
-harvesting process occurs which involves removing the wheat grains from the plant
-harvested wheat grains stored until needed for use
-harvested wheat transported to a mill
4 stages of processing wheat into bread
CLEANING: wheat is cleaned and conditioned (to soften outer bran layer)
MILLING: flour milled using a range of rollers and sieves
FLOUR: the bran, wheat germ and endosperm are separated and blended into different types of flour; whole meal, brown and white
BREAD: secondary processing using the flour to convert them into bread. Steps include weighing, mixing, proving, shaping, baking and slicing
