Food Poisoning Flashcards
How can food poisoning occur?
Poor food preparation
Microbiological hazards not being controlled
Symptoms of food poisoning
Nausea
Vomiting
Stomach pains
Diarrhoea
People at high risk from food poisoning
Elderly people
Babies
Anyone who is Ill or pregnant
Food poisoning micro organisms
Most bacteria is harmless but a small number can cause illness.
Food contaminated with the harmful micro organisms can still look, smell and taste normal.
Destroying Bacteria
Most bacteria in food can be destroyed by cooking it thoroughly (heating the food to 100°C)
If microbiological hazards are not controlled in a food premises, then food poisoning is likely to occur
Bacterial growth and multiplication
Bacteria including those that are harmful, have 4 requirements to survive and grow:
Food
Moisture
Warmth
Time
How can bacteria protect themselves?
Bacteria can protect themselves against harmful conditions like high temperatures and chemicals by producing spores.
Food spoilage
