1. Place chosen fish in a dissection tray or on cutting board
2. Push back the operculum & use scissors to carefully remove the gills. Cut each gill arch through the bone at the top & bottom
3. If you look closely, you should be able to see the gill filaments
4. Finish off by drawing the gill & labelling it
