Kumamoto Oyster
Kumamoto Oysters are deep-cupped with petite meats, have a mild brininess, sweet flavor and a honeydew finish. They are a favorite for both new oyster eaters and connoisseurs. Kumamoto oysters originated in Yatsushiro Bay, Kumamoto Prefecture, Kyushu Japan and were shipped to the US in 1945.
Primarily farmed in the South Puget Sound, in WA.

Netart Bay Oyster
Netart Bay Oysters have tender meats, medium-high brininess, a pronounced flavor and a metallic finish. Identified by their longer profile, brighter green color and distinct black striping on the lips.

Rainbow Trout
Have 6 Geographical Groups, with a total of 15 sub-species. When they become Ocean going, they are known as “anadromous”, and become Steelhead.

A large shad population occurs in the Columbia River. In recent years, shad counts at Bonneville and The Dalles Dams have ranged from over two million to over five million fish per year.
Bycatch
Fishermen sometimes catch and discard animals they do not want, cannot sell, or are not allowed to keep, creating what we know as bycatch. Bycatch can be fish, but also includes marine mammals, sea turtles, and seabirds that become hooked or entangled in fishing gear.
