Sofrito is a sauce used as a base in Spanish and Latin American cooking, it consists of aromatic ingredients, such as garlic, onions and etc, cut into small pieces and sauteed in a bit of oil.

Our lemon garlic sofrito is the main sauce used on our Winter K-Bobs.

As for reds, possibly Folonari Pinot Noir since it is a lighter bodied red and Borsao, due to it’s versatility with a wide range of dishes.

Salmon is a fattier fish, so it’s a medium bodied type of protein, so it calls for more medium bodied wines such as Natura & Talbott Chardonnay, and Hahn & Planet Oregon Pinot Noir, these are recommended, but the Mohua Sauvignon Blanc and Riesling would work as well.

I would recommend a Wheat or Hefeweizen, since citrus pairs well with seafood and it will also cut some of the richness of the grits, such as Karbach Weisse Versa or St. Arnold Weedwacker, but I believe St. Arnold Amber and Bombshell Blonde would be good choices as well, just not a dark, heavy beer.
