- 6 oz Pork Tenderloin we source from Black Hills Ranch, cooked to a medium temperature
- comes with a coffee crust that we get from Greenway Coffee

What is gnocchi?
potato dumplings used in pasta style dishes
What is sofrito? What dish is it associated with?
Sofrito is a sauce used as a base in Spanish and Latin American cooking, it consists of aromatic ingredients, such as garlic, onions and etc, cut into small pieces and sauteed in a bit of oil.
Our lemon garlic sofrito is the main sauce used on our Winter K-Bobs.
What is frisee?
It’s a curly, slightly bitter green that’s part of the endive family, a very popular salad vegetable in France.
What are winter greens?
Winter greens are green leaved vegetables available during the winter season, the winter greens Dish serves are Frisee, Baby Kale, and Collards.
What is marjoram? What dish is it associated with?
Marjoram is an herb that has sort of sweet pine, citrus flavor. It is associated with the Crispy Pork Belly Bites.
What kind of fish is drum?
Black Drum is a white fish that has a mild, sweet flavor with firm flesh and large, moist flakes, with a texture somewhat comparable to Red Snapper.
What wine would you recommend with the gnocchi?
Natura & Talbott Chardonnary, Riff Pinot Grigio
As for reds, possibly Folonari Pinot Noir since it is a lighter bodied red and Borsao, due to it’s versatility with a wide range of dishes.
What wine would you recommend with the citrus salmon?
Salmon is a fattier fish, so it’s a medium bodied type of protein, so it calls for more medium bodied wines such as Natura & Talbott Chardonnay, and Hahn & Planet Oregon Pinot Noir, these are recommended, but the Mohua Sauvignon Blanc and Riesling would work as well.
What is quinoa?
It is a grain-like seed that is high in protein, fiber, antioxidants, gluten free and has a lot of nutritional value.

a green sauce used for grilled meat, originally from Argentina. It is based on finely-chopped parsley, minced garlic, olive oil, oregano, and white or red wine vinegar
