Chablis
a place in the north of France, very cold. Light bodied French dry wine. Unoaked with crisp, high acidity, green fruit and citrus aromas, made from Chardonnnay
Champagne
A region, cold place. French sparkling wine made from a blend of Chardonnay and Pinot Noir. High acidity.
Sancerre
Medium bodied, French, high acidity, medium to pronounced flavours of green fruit and herbaceous notes. Made from Sauvignon Blanc. Neutral, restrained.
Red Bordeaux
Medium bodied, high tannin, French. Typically blend of Cab Sav & Merlot. Often oak aromas and flavours. Strong, acidic.
Pinot Grigio
Pinot Gris. Grown in Italy, used for dry white, light in body and flavour, high acidity.
Sauternes
Sweet white wine made in Bordeaux. Full bodied, stone fruit (apricot) honey balanced acidity
Soave
light bodied, Italian wine with citrus, apple, high acidity
Cava
popular light-bodied sparkling wine from Spain, less expensive than Champagne
Chateauneuf-du-Pape
a place in France, full bodied red with red fruits and spicy flavours, oak, ripe fruit
Rioja
a place in Spain, medium to full body, red fruit, spicy oak, dry
Chianti
place in Tuscany, medium body, high tannin and acidity
