define food culture
food culture is the shared or learnt patterns of behaviour or identity of a group of people ,includes the characteristics, cultures, customs and knowledge of the group and is based on their shared language, religion , ideas and behaviour
define food cuisine
is the style of preparation and cooking that reflects that characteristics of a particular country or geographic region.
a cuisine is based on the distinctive ingredients, cooking techniques and traditional dishes of the group
what is the hunter gatherer lifestyle like?
- they live in villages and groups called bands of kinship groups
- they don’t have a leader
- they children are breast fed until 4yrs old
- sharing is a central feature of their life all things are shared
- they live in rain forests in the democratic republic of the Congo
what is a hunter gatherer?
a term used to describe humans who obtain their food from nature by hunting and gathering wild plants
challenges that the hunter gatherers face:
- change in climate (food shortages)
- population growth
- higher demand for food
what were spices first used for?
spices were used as a currency and were more expensive then gold
it as also used as a medicine and as perfumes
what is the Silk Road?
it was an overland route in Europe which linked eastern nations with the mediteranian which allowed trade between India, china and Italy
what was the hunter gatherer farming like?
they burnt land (Swidden farming) then planted, watered, weeded, thinned, cropped and then stored their foods
what is a primary product?
something that is picked, grown or killed eg fruit meat or veg
eg apple
what is a secondary product?
things that man can make. anything that has gone though a process
eg apple juice
what is pasteurised
the process with milk where they heat the milk to kill bacteria
what is a primary process?
means that the food can be harvested, slaughtered, washed, graded and transported but the food still remains the same (exception to milk & milk as they can’t be consumed without being processed)
what is a secondary process?
the food structure will be entered eg juiced, sliced, canned or packaged or made into another for product using the original product
eg a dead pig into pork chops

a gentle way of cooking
submerging foods into boiling water for them to be cooked such as with fruit and vegetables
what is coagulation
the egg protein setting in a cake or mixture which gives it structure and makes it firm
what is caramelisation
caramelisation of the sugar over heat which makes a syrup. the syrup thickens and turns brown
what is dextrinisation
the browning of starch in a car while its being cooked in the oven
