Mojito
60ml White Rum
30ml Lime Juice
20ml Sugar Syrup
Half a fresh Lime (cut into quarters)
3-5 fresh mint leaves
Soda
Method:
Add all ingredients except the mint and soda to a cocktail shaker. Half fill with ice and give a
quick hard shake. Dump into a highball/bamboo glass, add mint, and use a bar spoon to
disperse within the drink. Top with ice and add soda to fill any remaining room. Garnish with
a straw, lime wedge and a fresh sprig of mint
Pina Colada
60ml White Rum
30ml Coconut Cream
45ml Pineapple Juice
20ml Lime Juice
10ml Sugar Syrup
Method:
Shake all the ingredients over ice and strain into a wine glass / hurricane glass over ice.
Garnish with a wedge of fresh pineapple
Martini (gin or vodka)
60ml Spirit
10ml Dry Vermouth
Stir both ingredients on ice until diluted to taste. Strain into a chilled martini glass / coupe and garnish
Garnish options are either a lemon twist for a clean martini or skewered olives for a dirty martini
A dirty martini includes olive brine, how dirty to make the martini is up to the guest. A standard dirty martini uses 10-15ml of brine. A very dirty martini uses 30ml of brine.
Long Island Iced Tea
15ml White Rum
15ml White Tequila
15ml Vodka
15ml Gin
15ml Cointreau
30ml Lemon Juice
20ml Sugar Syrup
Method:
Shake all ingredients on ice and strain into a highball glass with ice. Top with cola and garnish with a lemon wheel and a straw
Aperol Spritz
3 parts Prosecco (D.O.C preferred), 75ml
2 parts Aperol, 50ml
1 part Soda, 25ml
Method:
Fill a large wine glass with ice. First pour 75ml of Prosecco into the glass, then add 50ml Aperol and then top with a 25ml dash of soda and garnish with a slice of orange
Whiskey Sour
60ml Bourbon
30ml Lemon Juice
15ml Sugar Syrup
1x dash of Aquafaba (or 2 drops Wonder Foam)
Method:
Shake hard on ice and then strain into the same shaker. Discard the ice and shake again hard
with no ice. Fine strain this into a rocks glass over ice and garnish with a cherry and orange
twist
Old Fashioned
60ml Bourbon
2x dashes of Angostura Bitters
10ml Sugar Syrup
Method:
Stir ingredients on ice and then strain over a large block ice in a rocks glass. Garnish with an orange twist
Daiquiri
60ml White Rum
30ml Lime Juice
15ml Sugar Syrup
Method:
Shake all ingredients hard on ice and fine strain into coupe glass - no garnish
Cosmopolitan
45ml vodka
15ml Cointreau
30ml Lime Juice
15ml Sugar Syrup
45ml Cranberry Juice
Method:
Shake all ingredients hard on ice and fine strain into martini glass. Garnish with a flamed orange zest.
Manhattan
45ml Whisky
15ml Sweet Vermouth
2x dashes of angostura bitters
Method:
Stir all ingredients on ice until dilute. Strain into a chilled coupe / martini glass and
drop a cherry into the centre of the glass to sink
