What are enzymes made up of?

A

Enzymes are made up of all large proteins and all proteins are made up of chains of amino acids.

What is the lock and key theory?

A

The lock and key theory shows the model of enzyme action. The active site changes shape a little as the substrate binds to it to get a tighter fit.

What can affect a enzyme and how?

A

A higher temperature increases the rate of an enzyme-catalysed reaction but if it gets too hot, the bonds holding the enzyme together break so the enzyme becomes denatured, so the substrate won’t fit anymore. All enzymes have an optimum temp. pH also affects enzymes as if its too high or too low the bonds can break and also have an optimum pH, normally being 7(NOT ALL)

Where is amylase made and what does it break down?

A

Amylase is a carbohydrase, and it breaks down starch into MALTOSE or other sugars. It is made in the SALIVARY GLANDS, the PANCREAS and the SMALL INTESTINE

Protease breaks down proteins into AMINO ACIDS.They are made in the STOMACH, the PANCREAS and the SMALL INTESTINE.

A

What is bile?

A

Bile is made in the liver and stored in the gall bladder. It is ALKALINE to neutralise hydrochloric acid from the stomach. It also emulsifies fats to form small droplets which increase surface area. The alkaline conditions and large DA increase rate of fat breakdown by lipase.

A

Place food in a test tube inside a hot water bath. Add Benedict’s solution. If Benedict’s solution goes from blue to brick red it is a positive test.

A

Add iodine to food sample. If it goes from browny orange to black or blue black it is a positive test

How do you test for proteins in food?

A

Add Biuret’s solution to food.If the solution goes from blue to purple it is a positive test.

How do you test for lipids in food?

A

Pour a small sample of food with ethanol in dry test tube. Pour this into a tube full of cold water. If water goes milky white/ white substrate is formed, the food contains lipids.
