special PROTEINS that act as BIOLOGICAL CATALYSTS, breaking down molecules.
What is the ‘lock and key’ principle?
They are specific so they only break down SUBSTRATES that fit their ACTIVE SITE
How does an enzyme denature?
When the rate of reaction increases with temperature,
or if the pH is too low or high
