speed up the conversion of large insoluble molecules into small soluble molecules that can be absorbed into the bloodstream

enzymes catalyse specific reactions in living organisms due to the shape of their active site

- too high temperature/ pH or too low pH denatures the active site of the enzyme
- this means the enzyme doesn’t work
