crude oil is a mixture of hydrocarbons with different chain lengths
1. heat the crude oil to turn the hydrocarbons into gas
2. hot gas rise up the fractionating column, which is hot at the bottom and cooler at the top
3. longer chains = higher BP = condense at lower temp = collected at the bottom; vice versa for shorter chains
