What are Emulsifiers
A
They stop oil and water seperating out into layers

Describe an emulsifier
A
- Hydrophilic head attracted to water (negative charge)
- Hydrophobic tail attracted to oul (positive charge)

Why do we use an emulsifier
A
- To improve taste
- Increase shelf life as it stops food seperating
- Reduce fat content
