Emilia romagna An aceto tradizionale starts as grape must, of course; most producers in Modena use the red lambrusco, while those in Reggio prefer the higher-acid white trebbiano. But before the grape musts for aceto tradizionale are fermented, they are first heated for forty hours, a process that reduces them to sugar-rich syrups. The cooked musts are then left to ferment throughout the winter, reaching an alcohol content of about 4 to 5 percent, after which they are transferred to barrels for aging.
