Introduction to what wine is.
At its basic level, what is wine?
Wine is an alcoholic beverage made from fermented grape juice.
In order for fermentation to occur, what must be present?
Yeast, as well as sugars.
What is done to grapes to release their juice?
They are crushed.
What are the two dominant types of grapes for making wine?
White grapes and black grapes.
What do black grape skins contain?
Tannin
As well as color and flavor compounds.
How do tannins feel on your palate?
Dry and astringent.
What color is the skin of white grapes?
Green to Yellow to Golden
The pulp of the grape contains…
Water, sugar, and acid.
What does ABV stand for?
Alcohol By Volume
This is the measure of how much alcohol is in a wine, expressed as a percentage.
What are the by-products of fermentation?
Alcohol (ethanol) and Carbon Dioxide (CO2).
What are the microscopic organisms responsible for fermentation?
Yeast
At what percentage does alcoholic fermentation usually stop?
15%
Most yeast cannot survive at a percentage higher than this.
