Eggs Flashcards
Organic eggs meaning
Hens raised without growth hormones, antibiotics. The feed has no artificial pesticides or fertilisers
Free-range eggs meaning
Hens are free to roam around, not caged
Battery eggs
Hens lay eggs in an enclosed cage
Chalazae
A structure within eggs to hold the yoke in place
Lecithin
A natural emulsifier found in egg yokes
Albumin
A water-soluble protein found in eggs
Define coagulation
Egg proteins set due to heating.
What temperature do egg whites coagulate at?
60C
What temperature do egg yokes coagulate at?
68C
Outline the effect of coagulation on the protein chains of eggs
Coagulation causes the protein chains to untwist and straighten out and bond together around small pockets of water.
Practical application of coagulation in Clarification
Egg whites are whisked into clear soups, any solid particles in the soup become entrapped in the coagulated egg white. the soup is strained, and the egg white and particles are removed resulting in a clear soup.
Define aeration
Air bubbles are formed from whisking the egg whites. During whisking enough heat is generated to coagulate the egg protein forming a bubble of egg white around the air. Cook to set
Practical application of aeration
aerated desserts such as meringues and soufflés
What is pasteurisation of eggs?
Heat treatment to ensure eggs for commercial use are free from salmonella and other pathogenic bacteria
Describe the composition of the shell of an egg
10% of the total egg
composed of calcium carbonate
