Boiled eggs
Are gently or lightly cooked eggs. They can be partially, heavily or hardly cooked
Coddled Eggs
Cooked in a hot greased pot or pan. Can be sunny side up, over easy, over medium, over well and over hard.
Fried Eggs
Dish made from beaten eggs quickly cooked with butter or oil but not furthered stirred while cooking
Omelette
An egg that is cooked by poaching in simmer liquid, or a method where the egg is placed in a cup and suspended in simmering water by using a special pan called “egg-poacher”
Poached eggs
Egg made from beaten egg whites and yolks (usually chicken eggs). Stirred frequently, forming curds as they coagulate)
Scrambled eggs
Also known as baked eggs, a dish which eggs have been baked in a flat bottomed dish.
Shirred eggs
Sunny side up eggs that are slightly cooked on the top. Can be accomplished by spooning fat from the pan onto the eggs or by turning them and cooking the yolk in a few seconds.
Basted eggs
A developing duck embryo which is boiled alive and eaten in the shell.
Balut
Chinese cuisine made by preserving duck, chicken or quail eggs in a mixture of clay, ash, salt, quicklime and rice hulls.
Century eggs
Yolks of hard boiled eggs are mashed with cream or mayonaisse, mustard and seasoning and returning them on the egg by mounding or piping it.
Devilled eggs
Hard boiled eggs that are preserved by curing it in a vinegar or brine.
Pickled eggs
Type of omelette that made famous during the California Gold Rush in the 1850s. It includes bacon and oyster that are fried with the egg.
Hangtown fry
Black boiled eggs that are cooked in sulphur rich hot spring.
Kuro-tamago hard-boiled eggs
Type of italian omelette that contains egg, horseradish and cheese.
Rafanata
Hard boiled egg that is wrapped in sausage meet, coated with break crumbs and baked or deep fried. This is famous in England.
Scotch Egg
Also known as Spanish Tortilla, a spanish dish containing of a thick egg omelette, with potatoes and fried with olive oil.
Spanish Omelette
Spicy dish made with boiled eggs, tomatoes and fried onions which is usually eaten with a bread.
Egg curry
Chinese soup of wispy beaten eggs boiled with chicken broth.
Egg drop soup
Often used as a sandwich filling, made of chopped hard-boiled eggs, mayonnaise, mustard, minced celery, onion, salt, pepper and paprika.
Egg Salad
A sandwich made with some kind of egg filling. Sliced hard boiled eggs, egg salad, and scrambled eggs are popular options. Additional fillings such as various meet and cheese abound.
