Peat
Peat forms when organic matter is not fully decomposed because of acidic and / or anaerobic conditions in waterlogged soils, with examples being in bogs/marshlands in the Scottish Highlands.
You can also radiocarbon date peat, and analyse pollen grains in it as an indicator of past foliage levels and how they have reduced due to climate change.
