Gently muddle 6-10 mint leaves in the bottom of the collins glass. Pack with ice. Hard shake watermelon puree and tequila. Add sparkling wine to shaker. Strain into glass. Gently stir to mix, but try not to lift the mint leaves. Garnish.

Ingredients: 2.5 oz Rye 3 dashes Peychaud Bitters 3 dashes Angostura Bitters Absinthe
