DLA4- Intro to Foodborne Illnesses Flashcards
Allogenic factors for GIT infections
(external factors)
-diet geographic location (individually and together)
- age
- antibiotic therapy
- GI surgery
Autogenic factors for GIT infections
(internal factor)
- environment (flora, pH, immunity)
- Temp (37C)
- oxygen (aerobic / anaerobic)
- mucus
- shedding of epithelium
- peristalsis
the main treatment for acute diarrhea is…..
Rehydration therapy:
i) ORT (oral rehydration therapy): packets given containing water, salt (NaCl, KCl), sugar (glucose), trisodium citrate
ii) IV rehydration: for shock, exhaustion precluding oral feeding, ORT failure
drugs (OTC) taken for diarrhea (non-ORTs)
- Antiemetics: reduce fluid loss (to inc rehydration effectiveness)
- Anti-diarrheals: reduces gut motility, allows for accumulation of fluid (rarely successful- sometimes good to rid of toxins)
Food-borne infections:
- (1) low income country risks
- (2) high income country risks
-(3) basic principles
1- contaminated foods / water
2- technology / mass production of food
3- good hygiene, clean water, hand-washing, safe food manufacturing / production and preparation
current vaccines for GIT pathogens
- *rotavirus
- *HepA, *HepB
- Cholera
- Typhoid
