Warm rice pudding / apples / cinnamon streusel / lemon / thyme
Fuji apples are first sautéed in butter with a little rosemary, then flambeed with apple brandy, sticky rice and apple pie sauce (fuji and granny smith apples, cooked in butter with ground ginger, cinnamon, clove and nutmeg. Simmered with simple syrup and finished with milk, cream and dulce de leche) are added to the pan and simmered until the rice is tender and luscious and creamy.
The pudding is garnished with puffed wild rice and puffed brown rice seasoned in vanilla sugar, streusel crumb (flour, brown sugar, butter and cinnamon) granny smith apple, fresh thyme and lemon zest.

Spiced Nutella flan / Nutella custard / crystalized hazelnuts / lime
Flan is a Latin American custard that is very popular in south Florida. Ours is made with evaporated and condensed milk, Nutella, whole eggs and a touch of jerk spice.
We make a sugar caramel, that is set in the base of the baking tins, the custard base is added and they are steamed to set, chilled overnight.
When they are turned out of the tins, they glaze themselves with the caramel from the bottom of the tin. We add some crystalized chopped hazelnuts for texture and enforce the flavor of the Nutella, and a little fresh lime zest.

Brown Butter Financier coconut / pecan caramel / milk ice
A financier is a small, delicate cake typically made with egg whites, almond flour and butter. Ours is made with freshly milled white wheat from Kansas, coconut flour and brown butter that has been steeped with thyme. The cake is torn and served with thick, gooey, rich pecan caramel (pecan pie filling pureed with rum caramel) sweet lemon yogurt, candied pecans, rye granola (oats, rye bread, cane syrup) and mint. Served alongside milk ice.
The acidity of the yogurt, freshness of the mint and crisp milk ice help to lighten this rich desert.
