What is the 200 level spiel for the Moonfish?

A

Moonfish live in Hawaii’s Deep Ocean Region. The floor of these deep waters consists of ancient volcanoes, which act as a massive filtration system creating some of the cleanest waters on the planet. Moonfish are notoriously difficult to catch. We receive our Moonfish less than 24 hours from the water. We hand and age the fish for 3 days and serve it thinly sliced.
Then beneath the slices of Moonfish you will find gooseberries, smoked tomatoes, horseradish cream, and a vinaigrette of passionfruit, ahi Amarillo chili, and tomato seeds. To finish, we are using one of the rarest salts in the world, the Asian Tabuok. This dinosaur egg looking salt is a near extinct art form made by one family in the Philippines of the Central Visayas Region. It takes almost 6 months to make just one of these salts. It adds a beautiful fruity and smoky flavor to the moonfish.
Sungold and persimmon tomatoes are from Munak Ranch, Paso Robles California.

A

Here, we are showcasing Job’s tears. A seed grain of wild grass native to Southeast Asia. It has nutty and textural qualities similar to barley. The Job’s tears are quickly grilled and served with a burnt scallion vinaigrette, embered snap peas, and yellow nectarine. to finish there is a smoked almond emulsion that is dusted with burnt habanero powder, and pea tendrils. And now a light dusting of sun-dried lime that behaves more like a spice than a fruit.

A

This has become somewhat of a signature dish - Burnt Maruzaki Yam. This is an heirloom variety known for its creamy texture. The yams are steamed and then cooked directly in the ashes developing a smoky crust of burnt skin which provides a lovely textural contrast. The yam is accompanied by red maradol papaya, heirloom cucumber, smoked steelhead roe, burnt hazelnuts, pickled papaya seed, and a sauce made from grass fed butter and rice yeast. The yam is from Miliken Family Farm in Santa Barbara California.

A

Pacific Silk snapper coming from the Bay of La Paz located on the eastern pacific side of the Baja Peninsula. The fish is grilled over the embers and served with young baby white turnips from Tamai Family Farms in Oxnard California that are glazed with banana vinegar and yacon molasses. In the center is a spicy praline made from smoked chilies, hazelnuts, and roasted kelp. To finish this is a light sale of banana butter and plantain vinegar.

You have reached your final savory course for the evening. Heritage duck from Liberty Farms in Sonoma California has been aged for 14 days and slow roasted over our hearth to medium rare. To the right you will find hearts of grilled chicory and an heirloom sesame cream hiding next to it. The dish is finished with prunes poached in Mezcal and a sauce of tamarind and aji panca.

What is the 200 level spiel for the Amazonian Cacao?

A

The final dessert for the evening features a very special ingredient, wild cacao. This cacao is foraged by a group of families along the lower Baixo Amazonas Basin in Brazil. This particular cacao is harvested along the Acara River and is harvested by the men of these families and fermented by the women. This is true wild cacao. We have made a soft ganache with cocoa and garnished with a few components to compliment – Young coconut, puffed quinoa, and frozen cucumber cream, crushed macambo beans.
