fill with hot water 1in from top, 2oz espresso (ask if customer wants room)

fill with hot water 1.5in from top, 3oz espresso (ask if customer wants room)

fill with hot water 2in from top, 4oz espresso (ask if customer wants room)
Hot Cortado 8oz
2oz espresso; 3oz steamed half n half
Hot Macchiato 8oz
2oz espresso; steam 3oz milk use 1oz foam only to fill the cup to 1/3 full (milk is drier, excess microfoam)
Hot Cappuccino 8oz
2oz espresso; 5oz steamed whole milk
Milk should be velvety/meringue-like consistency
(if flat white requested, steam milk wet)
Hot Latte 12oz
2oz espresso; 8oz steamed milk, 3 pumps syrup
Hot Latte 16oz
3oz espresso; 10oz steamed milk, 4 pumps syrup

4oz espresso; 12oz steamed milk, 5 pumps syrup
Hot Baja Mocha 12oz
1 scoop powder, 1/8tsp cayenne, 6oz milk - steam, pour over 2oz espresso. Top with a shake of cinnamon whipped cream upon request.
Hot Baja Mocha 16oz
1.25 scoop powder, 1/4tsp cayenne, 8oz milk - steam, pour over 3oz espresso. Top with a shake of cinnamon whipped cream upon request.
Hot Baja Mocha 20oz
1.5 scoop powder, 1/4tsp cayenne, 10oz milk - steam, pour over 4oz espresso. Top with a shake of cinnamon whipped cream upon request.
