[Coupe Glass?], Garnish with Marigold right in the middle, no ice.
Describe the flavor of the De La Rosa.
Shaken, Earthy, Nutty, Refreshing, cooling, balanced. Good to contrast spice.
Which Cocktail has a Peanut Allergy? Which cocktail has a Tree Nut allergy? Can either be removed/substituted?
The De La Rosa for both. Neither can be removed.
What’s in the Hoji Santa? What’s it served in and garnished with?
6 Lime pieces, 2 cucumber slices, 1/2 Muddled Hoja Santa Leaf, 3/4oz Agave Nectar, 1.75oz Blanco, 1/4oz Pernod, pinch of shrimp salt (dehydrated Camarones+ Salt).
Rocks Glass, Shrimp salt on rim, served with the top half of leaf in the glass.
Describe the flavor of the Hoji Santa.
Fresh, Vegetal, Bright, Green, Herbaceous, Produce-Forward, Complex, Salt, Fish, Anise.

1/2oz lime, 1oz Tamarind Syrup, 1.5oz Tamarind Vodka, 1/2oz Amontillado Sherry, 3 dashes Tamarind, Lime, and Chili bitters, 1oz Tamarind Soda.
Collins glass, Tamranzella straw garnish.

Crisp, Tangy, Vibrant, Fizzy, Effervescent, Tamarind Candy, Refreshing, NOT Spicy, cool down spicy food

What’s in a Mole Rojo? What’s it served in and garnished with?
3/4oz Lime, 1oz Mole Grenadine, 1oz Reposado, 1oz Dry Vermouth, 1/2oz Ancho Reyes (aged poblano chili flavored liquor).
Rocks glass, Garnished with a torched chili clothes pinned to the drink.
Describe the flavor of the Mole Rojo.
Earthy, Complex, Refreshing, slight ancho pepper flavor, mild spice, juicy cooling flavor from pomegranate (Grenadine).
What’s that drink with the pepper on it over there? Am I supposed to eat the pepper?
That’s the Mole Rojo and, I have no idea, I think probably not.
What’s in the Borracho Gazpacho? What’s it served in and garnished with?
4 cherry tomatoes, 1 strawberry, 11 drops hellfire bitters, 3/4oz lemon juice, lime zest, 3/4oz celery/cilantro juice, 1/2 oz agave, 1/4oz beet escabeche, 2oz Mezcal, pinch of salt.
Rocks glass, Garnish with micro cilantro, Oro Blanco and lime twist, half cherry tomato.
Describe the flavor of the Borracho Gazpacho.
Fruity, fizzy, complex, spicy, savory, thick, beets, cooling, cilantro, tomato, sweet and then a lasting spice.
What does “Borracho Gazpacho” mean?
Drunk Gazpacho.
