Why double strain a cocktail?
Having shaken the cocktail, the ice cubes will have broken up a bit.
The first strain is through the Hawthorne, which takes the big stuff
The second is fine sieve will remove the tiny fragments of ice.
A Julep Strainer… used for what?
Keeping the ice back when being poured from beaker into a glass.

How should you ‘Build’ a cocktail?
A long glass filled with ice cubes.
Cocktail is poured in to within 1cm of the top.
A ‘Stirred’ cocktail is done how?
Use a mixing glass.
All the ingredients are added, along with cubed ice
Stirred with a bar spoon
Poured into another choice glass using a Julep Strainer to get rid of the ice
The Shaken Cocktail… how does it happen?
The ingredients put into one half of the shaker along with cubed ice.
The other half of the shaker is put on and then you shake the Bejasus out of it
Then, use a Hawthorne strainer to pour it into a glass - possibly using a fine sieve.
What effect does shaking have on a cocktail?
Chills it (of course), Aerates it and gives it a different texture.
What are the four factors behind a Balanced Cocktail?
Strength

What is the ‘strong’ component of a cocktail?
The booze bit, er, alcohol.
What is the ‘weak’ component of a cocktail?
The non-alcoholic bits - be that water from the ice, soda, juice… whatever
