Why double strain a cocktail?

A

Having shaken the cocktail, the ice cubes will have broken up a bit.
The first strain is through the Hawthorne, which takes the big stuff
The second is fine sieve will remove the tiny fragments of ice.

A

The ingredients put into one half of the shaker along with cubed ice.
The other half of the shaker is put on and then you shake the Bejasus out of it
Then, use a Hawthorne strainer to pour it into a glass - possibly using a fine sieve.
