- shake, double strain into rocks glass over large square cube

2.25oz Akashi Japanese Whiskey
3/4oz Lillet Rouge
1/2oz Massenet Framboise
4 dashes Cardamom Bitters
- batched drink
- pour 3.5oz of batch into mixing glass, add the bitters, stir with ice
- strain over a large square cube in a rocks glass
- garnish with a raspberry on the rim of the glass (or a pick?)

3/4oz PF Cognac 3/4oz Rittenhouse Rye 3/4oz Byrrh 1/8oz Dry Curaçao 1/8oz Tempus Fugit Creme de Cacao 4 drops Cranberry Bitters
- batched drink
- pour 3oz of batch into mixing glass, add bitters, stir over ice

- build in crystal highball glass, swizzle
- garnish with 2 Pineapple Fronds, Mint Sprig, Edible Flower and a straw

4 cups Sugar in the Raw
2 cups Water
6 pieces Lemon Omani, crushed
- dissolve Sugar and Water in a pot
- add Omani, let simmer and reduce for 10 minutes
- let sit overnight, strain the Omani pieces

1.5oz Mahon Gin
1/2oz Hierbas
1/2oz Yellow Chartreuse
3oz Citrus Soda
- combine all ingredients in Chardonnay glass over small cubes
- top with soda
- garnish with gold straw and wild mint on clip
What’s the recipe for the Citrus Soda from the Pomada?
5oz Lime Juice 5oz Lemon Oleo Saccharum 5oz Pomada mix 15oz Fresh Water 2 handfuls chopped Wild Mint
- add all ingredients to Soda Sparkle
- charge with 1 Soda Charger, shake 5 seconds
- strain Mint pieces out and filter into Soda Syphon
- use one more charger to charge Syphon
What’s wild mint garnish on Pomada?
3 spring tops Wild Mint
2 Purple Mint Blossoms
-tie bunch with one once gold twine
Fraiche de Bois?
1oz Lemon Juice 1/2oz Red Verjus 1/2oz Ginger Syrup 2oz Strawberry Purée Ginger Ale
- shake all ingredients, single strain into etched highball (over ice)
- top with ginger ale
- garnish with lemon wheel and a straw
