“Keeping in line with our Crown’s this fall/winter Crown is light and refreshing however it is extremely layered and intriguing. Honeycrisp Apple Juice is acidified to make it nice and tart. Tamarind pulp is made into a syrup making it rich but still keeping its naturally tart and earthy undertones. Reposado Tequila is infused with Charred Sunchokes, the earthiness of the sunchoke with the crisp flavors from apple and tamarind really make this a harmonious match. The cocktail is lengthened with Fino Sherry and a touch of Genepy giving it a subtle herbaceous layer. The final touch is a half teaspoon of a Pasilla Chili distillate which provides a smokey flavor that really brings out the sunchoke and tamarind.”

A bold old fashion take using a pumpkin washed Michters Rye Whiskey and accompanied by barley infused Amontillado sherry giving it a complex layer of nutty grasslike flavors. The cocktail is also partnered with calvados which is a brandy distilled using apples in which adds to fall-like flavors and more complexity using Rhine Hall mango brandy to add it all together. The cocktail is then utilized as a sweet potato syrup with an array of spices to add a pumpkin spice profile. The drink is finished using saline to brighten up the flavors and mole bitters to add more spices and complexity.

“A savory sour with a blast of citrus coming from Meyer lemon sherbet (A citrus Cordial using peels, juice, and sugar). Boatyard Gin is infused with yellow beets and accompanied by Svol Swedish aquavit which features fresh dill which is cold-infused before the other botanicals are added, and fennel that’s been cracked and roasted to release its flavor and aroma. The result is a brighter flavor profile.
The sour is balanced out by a Meyer lemon sherbet in which the zests, and juices are produced to create the right balance of sweetness and tartness, and the flavor – more fruity and tropical than citrusy and tart. This cocktail is also lengthened and brightened with Cocci Americano, a half teaspoon of a yellow pepper saffron brine to add another layered savory component. This drink is served up in a coupe with a perfect circle punctured Yellow Beet as a garnish.”
