How did the open fields function ?
Every year, 2/3 of the fields were devoted to corn crops. 1/3 remained fallow so that the soil could recover it’s richness. There were commons and wastelands which provided hay for the villagers’ livestock.

The population was increasing only slowly
What was the situation of the farmers in the countryside?
Large class of freeholders (they owned the land they farmed) but the most farmers were smallholders who rented the land from the nobility and gentry. And there were also landless labourers who worked in large farms.
What happened that made the population decrease drastically ?
The Black plague that reduced the poplation by 1/3.
