Combine all drink ingredients in a shaker, and shake without ice to emulsify the egg white for 15 seconds or until you start seeing foam form
Fill the small shaker with regular ice and shake vigorously for 20 seconds
Strain into a chilled, large cocktail coupe, and garnish with the pineapple wedge
Ingredients are shaken with ice, then strained into a chilled cocktail glass.
The lemon peel should be squeezed to release its oils on top of the cocktail.
