1 Cut the carrot and snow peas in julienne. Cut the corn into quarter lenghtway.

2 Bring stock to boil, add carrot, corn, chopped chilli, chopped onion and chive, vinegar and sauce.

3 Simmer 2 minutes. Add snow peas, shredded bok choy and slice panfried tofu. Stir until cooked.

WONTON SOUP WITH BABY BOK CHOY

A

Chicken Stock 1 ½ lt,
Rice Wine 1 tbsp,
Light Soy Sauce 1 tbsp,
Sesame Seed Oil ½ tsp
, Baby Bok Choy 10 oz,
Chives 3 oz,
Red Chilli 2,
Bean Sprout 3 oz.

Bring the stock to boil, add rice wine, sauce, oil and wonton; simmer uncovered for five minute. Add bok choy, chives and chilli; simmer uncovered until bok choy is just wilted.

Wonton Dough: Flour 8 oz, Water 4 oz, Salt ½ tsp, Egg 1,

Mix the salt with the flour and stir in the water whipped with the egg. Knead the dough (firm) until smooth, cover with cloth and let rest for 1 hour. Roll very thin.

Wonton filling:

Soak dried shiitake mushroom with boiling water for 20 minutes. Drain, discard stems and chop caps finely.
Combine mushroom, minced chicken and shrimps, chopped onion, garlic, ginger, five spice, bread crumb, hoisin sauce, oil and egg. Roll mixture into balls, cover and refrigerate for 30 minutes.
Brush one wrapper (gow gees, wonton or spring roll wrapper) with little water, top with chicken ball and pleat wrapper firmly around the ball.

SPRING ROLLS

A

Shiitake Mushroom, Chinese Cabbage,
carrots,

Bean Sprout,
Ginger,
Peanuts (Sesame) Oil, Oyster Sauce,
Soya Sauce.

Stir-fry in a Wok the chopped garlic, sliced onion and mushroom. Add the ginger, the carrot “Julienne”, shredded cabbage and bean sprout. Season with oyster and soy sauce.
Place the filling in the corner of the spring roll wrapper, brush the ends with egg wash, roll it and fold in ends. Deep fry.

SPRING ROLL WRAPPER

Method 1: 1 lbs flour, 1 tsp salt, 1 egg, 4 oz ice water, cornstarch

Mix flour and salt and stir in egg and water dough holds together.
Knead until smooth and elastic, about 5 minutes and allow dough to rest at least 30 minutes.
Divide dough into fourths. Roll, with cornstarch, each piece to a 14X11 inch rectangle. Cut into 3-1/2 inch squares. Stack on a plate with cornstarch to prevent them from sticking together. Fill with filling.

Method 2: Rice Flour 7 oz, Flour 4 tbsp, Salt ½ tsp, Egg 4, Oil 1 tbsp, Water ½ liter.

Mix the eggs, oil and water and pour in sift rice flour, flour and salt to form a smooth batter. Cover and rest for 1 hour. Cook, only on one side, a thin pancake in a non sticking frying pan.

SWEET AND SOUR PORK

A

Pork fillet 1 ½ Lbs, Pineapple 1 lbs,
Cucumber 1 Lbs,
onion 6 Oz,
green Pepper 8 oz,
celery 6 Oz,
tomato sauce 3 Oz,
Soy Sauce,
Hoisin Sauce,
White Vinegar,
Chicken Stock,
Cornstarch, Oil.

Cut pork into 1 cm-thick slices, season with Hoisin sauce, coat with cornstarch and fry.
Stir-fry sliced onion, add peppers and celery. Stir in pineapple juice, tomato sauce, soy sauce, vinegar and chicken stock. Thicken with cornstarch.
Stir in pork, pineapple dice and cucumber and let cook a few minutes.

CHICKEN CHOP SUEY

A

4 - 6 ounces chicken meat,
salt,
1/4 egg white,
1 tbsp cornstarch,
10 oz seasoned oil,
1/2 tsp chopped garlic,
1 tsp fresh ginger,
4 spring onions,
6 oz bean sprouts,
1 small green pepper,
1/2 tsp sugar,
1 tbsp light soy sauce,
1/2 tbsp Chinese rice wine, 2 tbsp chicken stock stock, sesame oil.

Mix the chicken shreds with a pinch of the salt, the egg white and about 1 tsp cornstarch mixed with water. saute them in warm oil, stir to separate, then remove and drain them.
In a wok, stir-fry with oil all the vegetables for about 1 minute, add the remaining salt and sugar, then add the chicken with the soy sauce and wine. Stir-fry for another minute, and add the stock.
Finally thicken the gravy with the remaining cornflour, garnish with the sesame oil and serve hot.

Seasoned vegetable oil
Pour about ½ lt vegetable oil into a hot wok, add 2 - 3 small pieces of ginger root. In a few minutes, the ginger pieces should rise to the surface. When it turns from pale yellow to dark brown, turn off the heat and let the oil cool down before removing the ginger pieces.

1 .Pour the oil into a wok. When the oil is hot but not smoking, add the chopped chives and onion.

  1. Stir for about 15 seconds. Stir the seasoned and beaten eggs into the pan with a spatula and scramble until the eggs are dry and separate.
  2. Add the boiled rice to the eggs and mix thoroughly. Pour the soy sauce evenly over the mixture. Add the peas, carrots, ham, and bean sprouts. Stir constantly until all the ingredients are well mixed and heated through. Serve the fried rice immediately.
