2 Classifications of Restaurants
Independent and chain restaurants
typically owned by one or two proprietors, usually involved in day-to-day operation of the business
Independent restaurants
a group of restaurants, each identical in market, concept, design, service, food and name
chain restaurants
offers good selection of menu items (generally 15 or more different entrees) cooked to order, with nearly all the food being made on the premises from scratch
fine dining restaurants
a blend of two cuisines, such as Italian and Japanese
fusion
a sophisticated specialty with another type of restaurant, aim to wow the guest with a total experience. (particular decor or a limited menu that blends the theme)
theme restaurant
relaxed, may include restaurants from several classifications; chain or independent, ethnic, or theme
casual dining
independently owned and operated, the owners and their families provide something different for the adventurous diner or a taste of home for some
ethnic restaurants
consist of diverse operating facilities whose slogan is “quick food”
Types of operations include: hamburger, pizza, chicken, pancakes, sandwich shops and deliveries
quick service/fast food restaurants
trends in restaurant business
demographics. branding, alternative outlets, globalization, sustainability
