FDA
Food and Drug Administration. The FDA inspects all food except meat, poultry, and eggs. The agency also regulates food transported across state lines.
USDA
U.S. Department of Agriculture. The USDA regulates and inspects meat, poultry, and eggs. They also regulate food that crosses state boundaries or involves more than one state.
CDC
Centers for Disease Control and Prevention are agencies of the U.S. Department of Health and Human Services.
PHS
The Public Health Service (PHS) also assists the FDA, USDA, and state and local regulatory authorities. The PHS conducts research into the causes of foodborne-illness outbreaks.
Food Codes
Regulatory authorities write or adopt food codes that regulate retail and foodservice operations. Food codes may differ from the FDA Food Code, because these agencies are not required to adopt it.
Health Inspector
State and local health inspectors conduct restaurant and foodservice inspections in most states.
