Chapter 11 - Syrah and Grenache Flashcards
What is the difference between Syrah and Shiraz?
They are the same grape/wine but called Syrah in France and Shiraz in Australia
Describe the Syrah grape
Small with thick, dark skins. Black grape variety.
What kinds of wine does Syrah make?
Deeply coloured, with medium to high tannin and medium acidity. Usually full bodied m with black fruits, dark chocolate.
What would you see in moderate climate Syrah?
Hints of herbaceousness, smoked meat and spice (black pepper).
What would you expect of hot climate Syrah?
More sweet spice (liquorice)
How does age affect Syrah?
The best wines develop animal and vegetal complexity (leather, wet leaves, earth)
What climate does Syrah grow in?
Moderate to hot. It does not ripen in cool climates
Describe the use of oak with shiraz
Many Syrah wines undergo oak treatment either in barrels or via stages or chips. These five toast, smoke, vanilla and coconut flavours to the wine.
Describe the Grenache grape and wines it produces
Large with thin skins, high sugar and low acidity. Grenache wines are seldom deep in colour but usually very full bodied. Typically red fruit (strawberry, raspberry) characters with spice notes (white pepper, liquorice).
How does age effect Grenache?
Spice evolves to toffee and leather.
What climate does Grenache grow in?
Requires hot climate to ripen
What type of wine does Grenache make other than red wine? Describe these wines
Rose - tend to be full bodied and dry with red fruit (strawberries). Some are light bodied with medium sweetness.
Where is Grenache most widely used for rose? When should they be consumed? What would oak result in?
Southern Rhone, southern france and Spain. Should be consumed young and vibrant. Oak will dull the fruit and give an orange hue, although adds savoury complexity.
How does the Syrah/Grenache blend work?
Similar to Cab Sav Merlot.
Adding Grenache to Syrah can add alcohol, lower tanning and acidity, add red fruit and extra spice.
Adding Syrah to Grenache boosts colour, tannin and acidity and adds dark fruit characters.
What other grapes are blended with Syrah/Grenache?
In southern Rhône many, including Mourvèdre and Cinsault because they contribute to the character of the wine, others because they’re cheap or easy to grow.
