Chapter 1 Flashcards
Is Genetic Modification and Biotechnology the same thing? Why or why not?
NO! Biotech is using organisms or components to make products (ie beer). GM uses tech to alter the genetic makeup of the organism
What is an Ecosystem?
Dynamic complex of plant, animal and microorganism communities as well as the non living environment that interacts and functions as a unit
Bacteria and Viruses are examples of what?
Microbes or microorganisms
What is the most common source of food fixity?
Staphylococcus aureus bacteria
What is the flow of food safety?
Farm - processing - transportation - retail- consumer
What is HACCP?
Systematic plan to ID and correct potential micron hazards in manufacturing, distribution and commercial use of food products.
What elements do disease causing bacteria require?
Warmth, moisture and nutrients
What are 4 ways to keep food safe?
Clean, separate, cook and chill
What is a safe refrigerator and freezer temp?
At or below 4 degrees Celsius and -17 degrees Celsius
What is the boiling point of water?
100 degrees Celsius- kills all microbes
What is the safe temperature for holding hot foods?
60 degrees Celsius
What are the major sources of food borne illness?
Poultry and ground beef
Seafood
Produce
Eggs
What are the three rules when travelling?
Boil it, cook it, peel it
What 3 events must be present to preserve food?
Microbial growth, oxidative changes and enzymatic destruction of food molecules (p27 white). Processing aims to protect food from these three stages/spoilage
What are the 3 most common antimicrobial agents?
Antimicrobial agents protector food from microbes growth- 3 most common preservatives are salt, sugar and nitrites
