Why should eggs not be washed and stored in room temperatures?

A

It can remove the protective layer of eggs (cuticle) that prevemt bacteria from entering the egg.

  • Cold water reduces gas pressure in the air space of egg, there is high pressure outside and low pressure inside the egg –> therefore materials flow into the egg from a higher pressure to lower pressure, contaminating the egg.
