What is Méthode Ancestrale?
Also known as méthode rurale. A single fermentation begins in a tank, and before it finishes the wine is transferred into bottles. Yeast continue to ferment the remaining sugars giving the wine its sparkle. The wine may be disgorged, filtered and rebottled in clean glass prior to sale.
What is bidule?
A plastic capsule on the crown cap, to hold the sediment during dégorgement.
