What is Methode Rurale or Methode Ancestral?
Incompletely fermented wines that had been stored in the chill of winter began to re-ferment when temperatures rose in the spring. This process evolved into a method of sparkling wine production that is now called the Methode Rurale or Methode Ancestral.
What is Methode Champenoise?
The process for creating a high-pressure sparkling wine is known as the Traditional, or Classic, Method. This method involves producing a base wine, adding a
measured amount of sugar and yeast, and initiating a
second fermentation in the sealed bottle.

What is autolysis?
As fermentation runs its course, the yeast cells die and begin to decompose, releasing compounds that create toasty, nutty flavors in the wine in a process known as autolysis.
What is riddling & degorgement?
Riddling is a process which involves turning the bottle upside down and gently shaking it to get he yeast to collect near the cap.
This is followed by a process called disgorging (degorgement) in which the bottle is opened, the yeast extracted, and the bottle resealed as quickly as possible.
What is a pupitre and what is its capacity?
The traditional method of riddling, developed in Champagne in the nineteenth century, uses an A-frame rack with holes known as a pupitre which can hold 120 bottles.

How is Methode Dioise Ancestral different from Ancestral Method?
During production, the wine is kept chilled to around 50°F (10°C) all throughout the fermentation process, which may last up to six months. This is to mimic the ancient way of fermenting the wines of the region, when they were submerged in the icy waters of the nearby river.
Are ancestral method wines degorged?
No. Ancestral method wines are not filtered; although Methode Dioise Ancestral wines are filtered.
