Oysters
Mignonette, Lemon, Horseradish, cocktail sauce
A: Shellfish, Tomato, Onion, Garlic
Mignonette
sauce: red wine vinegar, shallots and peppercorns. Ours has the addition of yuzu citrus.
Cocktail Sauce
Ketchup (includes worcestershire sauce (vinegar, soy, anchovies, garlic, onions), horseradish, and Tabasco provides a sweet and spicy note to the oyster.
East Coast Oysters
(Atlantic) are often described as briny and metallic, these oysters taste like the sea. The shell will be shallow and have a smooth edge.
West Coast Oysters
Often described as having a creamy texture with a vegetal finish, flavors like cucumber and lettuce. The shell will be slightly deeper than an east coast oyster and have a scalloped edge.
Jumbo Shrimp
Per Piece U-6 Shrimp (6 shrimp to a pound, very large) are poached in a court bouillon (a stock made with white wine, lemon, carrots, celery, peppercorns, garlic and onion).
Garnish:Lemon, Cocktail Sauce and Fresh Horseradish.

Littleneck Clams
(1/2 doz.)
Served raw, littleneck clams are sweet and briny.

Peekytoe Crab
(1/4 lb.)
Maine Rock or Sand Crabs are also known as Peekytoe crabs. They are very sweet and flavorful.
Garnish: Lemon, Cocktail Sauce and crab aioli (mayonnaise flavored with curry, Sriracha, and Old Bay)

Cold Cracked Lobster
Hard shell lobsters from Maine or Nova Scotia

Cold King Crab

Alaskan king crab has been known to reach sizes of 20lbs. The legs are sold by how many are in a pound, ie 6-8, 12-14, etc etc. They have a sweet rich flavor and are tender and juicy. Served with cocktail sauce, horseradish and crab aioli.

Large (for 6-8): Peekytoe crab 4 ounces, ceviche 4 ounces, salmon tartar 4 ounces, 24 oysters, 12 clams, 12, mussels, 6 shrimp, 1 whole lobster, 4 ounces of King Crab 1 ounce seeweed salad 18 minutes

Sushi/Sashimi

Sashimi will be approximately ¾ oz per slice.
Portion size on sushi will vary due to the ingredients/preparation of each roll.
Sushi Rolls are all 5 pieces.
The word “sushi” refers to vinegar rice, or seasoned rice. A sushi roll is actually about the rice itself; the ingredients that are rolled inside or outside do not affect the rice. Sushi chefs spend years perfecting the “seasoning” for their rice. They have years of training and all they are allowed to do is make the rice. They don’t even get to touch the fish! Each Sushi chef has his own characteristic and unique “seasoning”.
The word “sashimi” means pierced meat, in our case it is ‘pierced’ with a knife; i.e. uncooked fish sliced very thinly.

Eel
Once considered cheap and undesirable, now good eel can be a luxury. Firm flesh and texture and very meaty; capable of standing up to strong flavors. Eel sauce: includessoy sauce, sugar, eel extract, and mirin.

Tuna
Big eye is a member of the mackerel family with a robust flavor and semi-firm texture. Big eye is more flavorful than yellowfin with a much higher fat content.
Hamachi
Also known as amberjack, or yellowtail. Has a sweet and buttery flavor with firm texture. Even with a higher fat content, it retains a clean flavor profile.
Salmon
High in protein, high in omega-3 fatty acid, high in vitamin D. Color ranging from orange to red. Very robust and distinct flavor.
Salmon Ikura
Salmon caviar, very rich in nutrition and critical omega 3 fatty acids.
Medai
Japanese snapper, low mercury risk. Is extremely popular in Japan and is traditionally served in celebrations.
Mackeral
Very rich in oil, high in omega 3, vitamin E and has a slight dry after taste.
Sushi Rice
Premium short grain sushi rice, rice wine vinegar, Mirin, salt, sugar.
MRC Roll
Poached shrimp roll topped with seared tuna; served with a ponzu-brown butter sauce made from citrus, soy, brown butter, and tempura flakes.

Spider Roll
Fried soft shell crab, avocado, cucumber with a sweet chili garlic sauce

Grace Roll
Cucumber wrapper, Hamachi, tuna, salmon, nori, cilantro, ponzu, mae ploy (sweet chili sauce)

Spicy tuna mix inside with spicy tobiko aioli, Asian pear; topped with togarashi (dried chili) spiced tuna, and served with a balsamic-soy reduction. Topped with seasame seeds.

Crab, torched salmon with miso honey sauce (made from white miso, honey, sake, ginger, and garlic), topped with a thinly sliced jalepeno.
